It's extremely unlikely that these modules will give you anything more
than a (virtual) serial port and a standard AT command set, unless
you're prepared to decap and reverse engineer them.  If you want to use
GSM as a transport in a larger electronics project they're great; if you
want to get into the nuts and bolts of GSM itself you'll want a USRP or
some type of micro-BTS.

(and if you do want to use GSM as a transport in a larger electronics
project, please use SSL for anything sensitive :)
