Delaware is nice for larger corporations because its laws are very 
tax-friendly for for-profit corps, but I agree, it makes much more sense 
for a non-profit to incorporate in their own state.

I heard back from my lawyer friend -- he's offered to help us put 
together an application for a nonprofit.
