I think for use in the network at 83c, gigabit is totally a good
guideline. At the same time I'm not helping out with the network so my
point of view on it is nothing more then that.
As you stated people have projects that might be able to use the
crappier hubs/switches. If I were to make a public art project with a
bunch of old machines/laptops (some ideas swimming around in my head
already) that only need a simple network link and not speed, I'd much
rather use the 4 port 10bit hub I brought over then $180 gigabit one.
More so if the possibility of theft or destruction is high.
CRTs are big and heavy, ominous and extremely hard to actually get rid
of (the most annoying thing of putting some of my old CRTs on the curb
a few years ago was getting the fuckers down three flights of stairs).
Networking gear doesn't take that much space and is easy to toss into
a trash can if need be.
