Greetings,
I just got processing up & running on Debian sid, fairly
straightforward. Grabbed the latest stable release (0135 BETA)
from http://processing.org/download/ (no checksums though):
    http://processing.org/download/processing-0135.tgz
After uncompressing it, cd'd into the directory and:
    ~/downloads/processing-0135 % ./processing
It appears that the version of Jikes distributed with
Processing cannot properly run on this system ... you
may just need to remove the version that is included
    with Processing...
I deleted the jikes that came with the download, but still got
that message. Creating a symlink to the the jikes already on
my system did the trick:
    ~/downloads/processing-0135 % ln -s /usr/bin/jikes jikes
then
    ~/downloads/processing-0135 % ./processing
and it seems to be running fine.
See y'all (well, some of y'all) on Saturday!
John
