Wasn’t it brown organic sugar? We use some brown sugar. That’s what I know.
The instrument is called hydrometer.

Just on my way back from a weekend trip to Portland, so no chat right now, but can tell you that we're using white cane sugar, that pasteurizing kills microorganisms, and that we measure sugar content by measuring the specific gravity/density of the fluid - can't remember the name of the instrument, though. Do you intend to participate in the brewing class on Wednesday?
